Pineapple with Mascarpone Cream

This is Sandra’s favorite dessert. I lost the original recipe and re-created it over time from bits and pieces on the internet and through trial and error. It think this is at least as good as the original.

Ingredients

  • One pineapple, cut into small cubes
  • Ginger, minced
  • Some brown sugar
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1 tsp Vanilla extract
  • Juice of one lemon
  • 1/4 cup of powdered sugar

Instructions

  1. Add pineapple, ginger, and brown sugar to a medium-size skillet and cook over medium heat until pineapple is soft. Set aside and let cool.
  2. Whisk together mascarpone, heavy cream, vanilla, and powdered sugar until smooth and thickened. Add the lemon juice and incorporate.
  3. In a bowl, add alternating layers of pineapple and cream, starting and finishing with pineapple. Alternatively, use a set of small dessert glasses instead of the bowl.

Notes

I think the original recipe may have had some rum in it. Try adding it to the pineapple and flambé. You could also add some lemon juice and/or zest to the pineapples.

The mascarpone cream hardens in the fridge. Make sure it starts out soft enough (by adding lemon juice).
