This is Sandra’s favorite dessert. I lost the original recipe and re-created it over time from bits and pieces on the internet and through trial and error. It think this is at least as good as the original.
Ingredients
- One pineapple, cut into small cubes
- Ginger, minced
- Some brown sugar
- 8 oz mascarpone cheese
- 1 cup heavy cream
- 1 tsp Vanilla extract
- Juice of one lemon
- 1/4 cup of powdered sugar
Instructions
- Add pineapple, ginger, and brown sugar to a medium-size skillet and cook over medium heat until pineapple is soft. Set aside and let cool.
- Whisk together mascarpone, heavy cream, vanilla, and powdered sugar until smooth and thickened. Add the lemon juice and incorporate.
- In a bowl, add alternating layers of pineapple and cream, starting and finishing with pineapple. Alternatively, use a set of small dessert glasses instead of the bowl.
Notes
I think the original recipe may have had some rum in it. Try adding it to the pineapple and flambé. You could also add some lemon juice and/or zest to the pineapples.
The mascarpone cream hardens in the fridge. Make sure it starts out soft enough (by adding lemon juice).
